Tip credit payroll complexity

FLSA tip credit isn't optional — it's a federal compliance requirement.

The $2.13 federal tip credit rate requires that declared tips always bring an employee to at least $7.25/hr (or your state minimum). Tip pooling arrangements must be documented and compliant. We track declared tips, verify the wage floor every pay period, and maintain the documentation trail your labor attorney would want to see.

Texas mixed-beverage tax

A separate 6.7% gross receipts tax on top of sales tax — for every mixed beverage permit holder.

Texas TABC permit holders pay the mixed-beverage gross receipts tax on all alcohol sales in addition to regular sales tax. Food sales, non-alcoholic beverage sales, and alcohol sales must each be tracked separately. We set up the chart of accounts to separate them from day one so your tax remittance is right every month.

Delivery app commission netting

The net deposit is not revenue — it's revenue minus what the platform took.

DoorDash, Uber Eats, and Grubhub deduct their commissions (15–30% of order value) before remitting to you. Recording only the deposit understates true revenue and hides the true cost of third-party delivery. We record each platform's gross sales as revenue and its commissions as cost of sales so you see the real margin on delivery orders.

Gift card deferred revenue

Gift cards sold are a liability until redeemed.

When a guest buys a $100 gift card, you haven't earned $100 — you've taken on a $100 obligation. Revenue is recognized only when the card is redeemed at the register. We track your gift card liability balance monthly and recognize income at redemption, so your P&L reflects meals actually served, not cash collected for future meals.

Prime cost ratio management

The most important number in restaurant finance — COGS plus labor as % of revenue.

Profitable independent restaurants typically run prime cost between 55% and 65% of revenue. Drift above 65% means food cost, labor, or both are out of control. We track prime cost monthly with enough detail to know whether the problem is protein cost, over-scheduling, or delivery platform erosion — so you can fix the right thing.
